Оседание после выпечки почти всегда говорит о том что мякиш не допёкся внутри или тесто перебродило — корка схватилась, а структура не зафиксировалась. Мы с этим разбирались когда меняли печь: оказалось что температурный профиль камеры отличался от старой и тесто вело себя иначе. Помогло то что нашли технолога который посмотрел процесс целиком и указал на конкретный этап. Такой формат работы — когда специалист разбирает твой процесс а не даёт общие советы — описан на https://lesaffre.ru/ там же форма запроса. Ещё проверь температуру в центре буханки перед выемкой — должна быть не ниже 94-96 градусов.
